All the literature over the centuries indicates that the area for producing Casatella Trevigiana DPO is in the province of Treviso. In fact, the Treviso district has always been an excellent area for producing soft cheeses, given its level and hilly surroundings, the breeding methods, totally dairy cattle, and the centuries old dairy traditions in all the areas within the province.
Still today, man’s expertise and dairy craft are fundamental to make the traditional Casatella Trevigiana DPO which, as is specified in the Production Regulations, must be made exclusively in the province of Treviso.
Consequently both the milk collection and cheese making must all take place within this area, to guarantee the very tight period between collection and transformation (48 hours), and to guarantee the quality standards of the final cheese are all maintained.
“The milk used to make Casatella Trevigiana DPO must come from the stables within the geographic area of the province of Treviso, and the cheese must be made, ripened and packaged within the same area.
The production area confines are the administrative borders of the province of Treviso, with the province of Belluno to the north, the province of Vicenza to the west, the province of Padua to the southwest, the province of Venice to the south and southeast and the province of Pordenone in the Friuli-Venezia-Giulia region to the east” (art. 3 of the production regulations).
How is traceability guaranteed?
“To guarantee the product’s origins, each production phase must be monitored and documented individually with the inputs (incoming products) and outputs (outgoing products). This, plus the registration of the cattle breeders, the dairies and the packaging firms in special lists, managed by the supervision organisation given in art. 7, registering the product quantities that are produced, all guarantee the traceability of the products.
All the individuals and legal entities that are registered in the lists, who want to use the denomination, are controlled by the supervision organisation, in accordance with the production regulations and control plan” (art. 4 of the production regulations).
